Ingredients

  • 2 cucumbers
  • 3 tsp salt
  • 2 tbsp groundnut oil
  • 4 chillies, long dried or 5 red jalapeno chillies snipped into 3 cm sections
  • 2 tsp Sichuan pepper, whole or tsp chilli powder
  • 3 tsp Blue Dragon Sesame Oil
  • A small handful coriander, finely chopped

Warm and Spicy Cucumber Salad

A wonderful wok-fried salad dish, in which cucumber is served warm. Strange you may think, but delicious!

Preparation:

  1. De-seed the cucumber and chop into pieces the size of oven chips (6cmx1cm). Salt, mix well and leave to one side for 30 mins until the water has been drawn out. Press well and drain. Pat the cucumber dry on kitchen paper towel.
  2. Heat a wok over a high heat until smoking, add the groundnut oil and turn the flame down to a medium heat. Add the chillies and pepper or chilli powder and fry until it smells aromatic and spicy and the chillies start to turn a deeper red colour. Don’t burn the spices!
  3. Add the cucumber slices and toss them in the infused oil. Remove from the heat, add the sesame oil and a sprinkle of chopped coriander and stir thoroughly before turning the cucumber onto a plate. It should not be cooked through, just warmed so that it takes in the spices. It can be served warm, or left to cool.

Cucumbers are not normally perceived as a vegetable you would cook because we are so used to having them in cold salads. In this easy recipe it brings them to life due to the aromatic and spicy oils used, and the Blue Dragon Sesame Oil gives it a great flavour. This is a nutritious and easy recipe for vegetarians.
