Blue Dragon Tempura Batter Mix
- 225ml
water, ice cold

Vegetable Tempura
A light and crispy batter which makes a great vegetarian snack or canape.
Preparation:
- Wash the vegetables; cut peppers and sweet potato into strips, leave the rest of the ingredients whole.
- Combine the Tempura Batter Mix with the water and stir well to remove most of the lumps. Ideally use the batter immediately and do not leave to stand.
- Heat the oil in a wok or deep fat fryer to 160ºC/325ºF.
- Dip vegetables into batter and deep fry in batches for 2-3 minutes or until golden brown.
- Tastes great dipped in Sweet Chilli Dipping Sauce or a delicious Ponzu Sauce.
