Ingredients

  • vegetables (mixed) such as mushrooms, peppers, baby sweetcorn, asparagus, green beans and sweet potato.
  • 1 pack Blue Dragon Tempura Batter Mix
  • 225ml water, ice cold
  • vegetable oil, for deep frying

Vegetable Tempura

A light and crispy batter which makes a great vegetarian snack or canape.

Preparation:

  1. Wash the vegetables; cut peppers and sweet potato into strips, leave the rest of the ingredients whole.
  2. Combine the Tempura Batter Mix with the water and stir well to remove most of the lumps. Ideally use the batter immediately and do not leave to stand.
  3. Heat the oil in a wok or deep fat fryer to 160ºC/325ºF.
  4. Dip vegetables into batter and deep fry in batches for 2-3 minutes or until golden brown.
  5. Tastes great dipped in Sweet Chilli Dipping Sauce or a delicious Ponzu Sauce.

For an even lighter texture, use sparkling water to make the batter.
