Vegetable Katsu Curry
A vegetarian take on this delicious restaurant favourite.
Preparation:
- Wash the rice thoroughly in cold water and drain. Add the rice to 400ml water in a pan and bring to the boil. Reduce the heat and cover. Simmer for 10 minutes or until the all the liquid has been absorbed.
- Whilst the rice is cooking, wash the vegetables, peel the sweet potato and peel and deseed the butternut squash. Cut the vegetables into 1cm thick slices and dust with flour.
- Dip the vegetable slices into beaten eggs and coat thoroughly with Panko Breadcrumbs.
- Heat oil in a large frying pan or deep fat fryer.
- Either fry or deep-fry the vegetable pieces until cooked through, golden brown and crispy. Drain off the oil.
- Heat the Japanese Curry Sauce in a saucepan until piping hot.
- Serve the vegetables on a bed of rice and pour over the warm curry sauce.
