Tofu Miso Soup

Ingredients

  • 1.4 litres water
  • 1-2 tbsp (see instructions on pack) vegetable stock powder
  • 1 leek, chopped into rings
  • 1 carrot - cut into fine matchsticks
  • 1 1/2 pieces kombu, dried
  • 1 pack Blue Dragon Tofu
  • 4 tbsp miso paste, red or brown
  • 2 spring onion, finely chopped

Tofu Miso Soup

A delicious soup that is famous for its health benefits. The Japanese eat miso soup with most meals - even with breakfast!

Preparation:

  1. Bring the water to the boil. Add the stock powder, leek, carrot, and kombu and simmer for 15 minutes.
  2. Remove the tofu from the pack and cut it into small cubes.
  3. In a small bowl mix the miso paste with some of the hot stock.
  4. Remove the stock from the heat and add the miso, tofu and spring onions.

Useful tip:

Sprinkle thin strips of sushi nori on top.
