Ingredients

water
- 1-2 tbsp (see instructions on pack)
vegetable stock powder
- 1
leek, chopped into rings
- 1
carrot - cut into fine matchsticks
- 1 1/2 pieces
kombu, dried
- 1 pack
Blue Dragon Tofu
- 4 tbsp
miso paste, red or brown
- 2
spring onion, finely chopped

Tofu Miso Soup
A delicious soup that is famous for its health benefits. The Japanese eat miso soup with most meals - even with breakfast!
Preparation:
- Bring the water to the boil. Add the stock powder, leek, carrot, and kombu and simmer for 15 minutes.
- Remove the tofu from the pack and cut it into small cubes.
- In a small bowl mix the miso paste with some of the hot stock.
- Remove the stock from the heat and add the miso, tofu and spring onions.
Useful tip:
Sprinkle thin strips of sushi nori on top.
