Thai Red Pork Curry
A quick and easy pork curry that can be cooked in minutes
Preparation:
- Cut the pork fillet into thin slices. Heat the groundnut oil in a large wok and fry the red curry paste, minced ginger and garlic for 30 seconds.
- Add the Blue Dragon Coconut Milk to the wok. Add the pork.
- Then slowly add the Blue Dragon Fish Sauce, juice of half a lime and sugar to taste. Bring to the boil and simmer for 5-6 minutes or until tender.
- Serve scattered with thinly shredded red chilli.
