Thai Noodle Broth
A deliciously refreshing soup, made with prawns, rice noodles and ginger
Preparation:
- Cook noodles as directed on pack.
- Heat the stock in a heavy-based pan and add the prawns, noodles, ginger, chilli, spring onions, limejuice, sugar fish sauce and coriander.
- Cover pan and leave for 5 minutes to infuse. Serve immediately.
Useful tip:
100g dry noodles give about 250g ready for wok noodles... more
