Thai Chicken Fried Rice

Thai Chicken Fried Rice Prep time: 10 mins

Ingredients

  • 2 tbsp vegetable oil, for frying
  • 2 chicken breasts, minced or chopped finely
  • 2 cloves garlic, peeled and finely chopped
  • 2 bird's eye chillies, finely chopped
  • 1 onion, finely sliced
  • 1 tablespoon Blue Dragon Fish Sauce
  • 1 red or yellow pepper, sliced into strips
  • 1 tablespoon dried lemongrass
  • 1 tablespoon Blue Dragon Light Soy Sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 2 kaffir lime leaves - crushed
  • 225g rice, cooked
  • A handful of coriander leaves - torn

Thai Chicken Fried Rice

This is a really simple dish with everything cooked together in the one pan. It works really well as a way to use up last night's leftover rice...

Preparation:

  1. In a wok or frying pan, heat the oil and add the chicken. Fry on a high heat until the chicken is cooked through. Remove the chicken from the pan and put to one side.
  2. Drain all but 1 tablespoon of the oil in the pan. Place the garlic, chillies, onion and pepper in the pan and stir fry until the onions are soft.
  3. Return the chicken to the pan along with the Blue Dragon Fish Sauce, Blue Dragon Light Soy Sauce, lemon grass, lime juice, sugar, kaffir lime leaves and rice. Stir fry until the rice is heated through.
  4. Toss in the coriander leaves and stir through. Check the seasoning and amend if necessary.
  5. Serve immediately onto a large dish for all to enjoy!

This was a great recipe and used all my store cupboard items! I replaced the Birds Eye Chilli and Sugar with Sweet Chilli Dipping Sauce-which made it slightly on the sweet side, so next time I would use Birds Eye Chilli. The dish itself was thrown together in no time at all so I would definitely make it again!
