Sweet Chilli Salmon parcels

salmon sweet chilli sauce Thai Prep time: 6 minutes 
Cooking time: 15 minutes (+ 5 minutes to stand)

Ingredients

  • 4 skinless salmon fillets
  • 8 tbsp Blue Dragon Sweet Chilli Dipping Sauce
  • 1 red onion, finely sliced
  • 100g spinach leaves, shredded
  • jasmine rice, to accompany (long-grain or basmati will also be fine)

Sweet Chilli Salmon parcels

Preparation:

  1. Preheat the oven to 200’c/400’F. Take 4 sheets of foil and place a salmon fillet in the centre of each one.
  2. Top each fillet with 2tbsp Sweet Chilli Dipping Sauce, and then divide the red onion and spinach between each fillet.
  3. Fold over the foil and seal the edges together by folding them over. Place in the oven for 15 minutes, then remove and leave to stand for 5 minutes.
  4. Remove from the foil and serve with the vegetables and Sauce poured over. Best served with rice or salad.

Useful tip:

For extra fluffy basmati rice, soak it for 20 minutes before cooking -the rice will absorb some of the water and after cooking will become lighter as a result of this... more

I always have a jar of Blue Dragon sweet thai chilli sauce open in the fridge, so this is a great way to make a quick easy meal. Healthy and tasty.

Thank you Blue Dragon. I used this recipe for inspiration as to other ways to use my Sweet Chilli Sauce! I placed in the parcel tomatoes, pepper onion and a good dollop of sweet chilli!
