Sweet Chilli Egg and Bacon Bap

This dish makes a delicious breakfast treat, especially at the weekend

Preparation:

1. Mix the mayonnaise and ½ of Blue Dragon Sweet Chilli Dipping Sauce together. Toast the muffin halves and spread both muffin pieces with the mayonnaise and Sweet Chilli Dipping Sauce mixture.
2. On one half of the muffin, carefully place the lettuce, poached or fried egg and top with the two slices of fried or grilled bacon. Drizzle this half with the remaining Sweet Chilli Dipping Sauce and sprinkle with the black pepper. Place the remaining half of the muffin on top and serve.
