Sweet and Sour Noodles

Sweet and Sour Noodles Prep time: 10 mins

Ingredients

  • 3 tbsp Blue Dragon Fish Sauce
  • 2 tbsp white wine vinegar
  • 2 tbsp caster sugar (or palm sugar)
  • 2 tbsp tomato purée
  • 2 tbsp vegetable oil
  • 3 garlic cloves, crushed
  • 250g fine rice noodlessoaked according to pack instructions
  • 8 spring onions, sliced
  • 175g carrot - grated
  • 150g/5 1/2oz bean sprouts
  • 225g/8oz king prawns, raw and peeled
  • 2 eggs, lightly beaten
  • 50g/1 3/4 oz peanuts, chopped
  • chilli flakes, to garnish

Sweet and Sour Noodles

This is a delicious and simple Thai dish that all the family will enjoy.

Preparation:

  1. Mix together the fish sauce, vinegar, sugar and tomato pureé in a small bowl. Set aside.
  2. Heat the vegetable oil in a large preheated wok and add the garlic, stir fry for 30 seconds.
  3. Drain the noodles thoroughly and add them to the wok together with the fish sauce and tomato pureé mixture. Mix well to combine.
  4. Add the spring onions, carrot, beansprouts to the wok and stir fry for 2-3 minutes.
  5. Move the contents of the wok to one side, add the beaten eggs to the empty part of the wok and cook until the eggs set. Add the noodles, prawns and peanuts to the wok and toss together until well combined.
  6. Transfer to warm serving dishes and garnish with chilli flakes.

Useful tip:

100g dry noodles give about 250g ready for wok noodles... more

Delicious! I loved the sweet and stickyness. I personally prefer to add cashew nuts and not peanuts. Also a sprinkling of sesame seeds is always a winner!!
