Sweet and Sour Chicken

Ingredients

  • 1 tbsp Blue Dragon Sesame Oil
  • 150ml Blue Dragon White Rice Vinegar
  • 100ml water
  • 70g sugar
  • 8 tbsp tomato ketchup
  • 2 tbsp vegetable oil
  • 4 chicken breasts (free-range if possible), cut into chunks
  • 1 red pepper, cored, deseeded and cut into chunks
  • 6 spring onions, trimmed and cut into 2.5cm lengths
  • 4cm fresh ginger, peeled and finely chopped
  • 200g fresh pineapple, diced
  • 1 green pepper, sliced
  • 2 tsp cornflour, mixed with a little water

Sweet and Sour Chicken

The kids will love this easy sweet and sour recipe!

Preparation:

  1. Mix the Sesame Oil, White Rice Vinegar, water, granulated sugar and tomato ketchup together in a bowl.
  2. Heat the vegetable oil in a wok, then add the chicken and stir fry for 3-4 minutes until cooked thoroughly.
  3. Add the remaining fresh ingredients and heat through. Once hot, add the wet mixture to the wok.
  4. When the sauce starts to boil, add the corn flour to thicken. Serve with rice (egg fried rice goes really well) or noodles.

The secret to the perfect stir fry is to make sure the oil is piping hot before you put the ingredients in the pan or wok... more
