lettuce, shredded

tuna in olive oil, drained

Sushi Sandwich Wraps
A healthy alternative to a bread sandwich for your lunchbox.
Preparation:
- Take a sushi mat and arrange it so the wooden batons are arranged horizontally, and the strings are running vertically (this will help rolling the wrap forwards).
- Lay the nori wrap on matt (rough side up!)
- Apply a bed of your favourite salad leaves, leaving an inch of nori lip at the opposite end.
- Scatter across the centre a line of tuna flakes or chunks - the tune in olive oil is nicest.
- Dip your finger in a cup of water and lightly wet the exposed nori lip at the opposite end.
- Use the sushi mat to roll forward and press at the end to seal the nori wrap.
- Slice and serve

Make sure the nori is matt side facing up, as this helps the filling to stick to the nori - especially effective with rice.
