groundnut or vegetable oil, for frying

red onions, cut into thin wedges
- 175g/6 oz
red cabbage, finely shredded
- 225g/8 oz
bok choy/ pak choi
- 1/2 sachet
Blue Dragon Wasabi Plum Shot
- 100g/3 1/2 oz
unsalted peanuts, roasted

Stir Fried Pak Choi with Red Onions and Peanuts
A quick and tasty vegetarian dish
Preparation:
- Heat the groundnut oil or vegetable oil in a large preheated wok.
- Add the onion wedges to the wok and stir fry for about 5 minutes or until the onions are just beginning to brown.
- Add the red cabbage to the wok and stir fry for a further 2-3 minutes.
- Add the pak choi to the wok and stir fry for about 5 minutes, or until the leaves have wilted.
- Drizzle half the sachet of Blue Dragon Wasabi Plum Shot over the vegetables, toss together until all the ingrdients are combined and heat through until the sauce is bubbling.
- Scatter with the roasted unsalted peanuts and transfer to warm serving bowls. Serve immediately.
