Ingredients

  • 2 tbsp groundnut or vegetable oil, for frying
  • 2 red onions, cut into thin wedges
  • 175g/6 oz red cabbage, finely shredded
  • 225g/8 oz bok choy/ pak choi
  • 1/2 sachet Blue Dragon Sticky Plum Stir Fry Sauce
  • 100g/3 1/2 oz unsalted peanuts, roasted

Stir Fried Pak Choi with Red Onions and Peanuts

Heat the groundnut oil or vegetable oil in a large preheated wok.

Preparation:

  1. Heat the groundnut oil or vegetable oil in a large preheated wok.
  2. Add the onion wedges to the wok and stir fry for about 5 minutes or until the onions are just beginning to brown.
  3. Add the red cabbage to the wok and stir fry for a further 2-3 minutes.
  4. Add the pak choi to the wok and stir fry for about 5 minutes, or until the leaves have wilted.
  5. Drizzle half the sachet of Blue Dragon Sticky Plum Stir Fry Sauce over the vegetables, toss together until all the ingrdients are combined and heat through until the sauce is bubbling.
  6. Scatter with the roasted unsalted peanuts and transfer to warm serving bowls. Serve immediately.
