A quick and easy way to enjoy duck, with the light and fresh flavour of mint leaves.

Cook the Blue Dragon Soba Noodles until tender, drain and rinse under cold water.
Remove the skin from the duck breast, cut the meat into thin slices and season with salt and pepper.
Heat the oil in a wok or frying pan until the pan is hot and add the garlic and leek and fry to release the aromas.
Add the the duck to the same pan and stir-fry for 2 minutes.
Next add the broad beans, mange tout and brocoli and fry for an additional 2 minutes.
Add Blue Dragon Mirin and Blue Dragon Light Soy Sauce and stir fry for a few more minutes.
Toss in the cooked noodles and bean sprouts and heat through.
Serve the stir fry in bowls and top with the mint leaves.
