Stir Fried Duck with Apples

This is a sumptious dish to be enjoyed at any time of the year. Serve with creamed potatoes for a spoiling mid-week dinner

Preparation:

  1. Remove any fat from the duck breats and slice into 1cm slices.
  2. Marinade the slices of duck breast in the soy and honey for at least one hour.
  3. In a wok or a pan, heat the oil and add sliced onions and apples. Stir-fry until the onions are almost soft,
  4. Add the duck and continue to stir-fry for 2-3 minutes.
  5. Add the sauce and the remaining ingredients, heat through and serve immediately.

Useful tip:

To stop the discolouration of chopped apples, place in a bowl of water with the juice of a lemon or lime... more


For a more intense flavour marinade for more than an hour (and keep in the fridge).
