Stir Fried Crispy Tofu
A delicous vegetarian dish.
Preparation:
- Preheat the grill to medium. Put the tofu cubes in a grill pan and grill for 2-3 minutes until golden brown on all sides, being careful not to burn them.
- Heat the oil in a wok or heavy frying pan. Add the green curry paste and cook over a medium heat for 30 seconds, until the paste releases its aroma.
- Stir in the soy sauce, lime leaves, sugar and vegetable stock into the wok or pan and stir well. Bring to the boil, then reduce the heat to low so that the mixture is just simmering.
- Add the asparagus and simmer gently for 5 minutes. Meanwhile, chop the pieces of tofu into 2cm cubes and add to the pan with the peanuts.
- Toss all the ingredients in the sauce, then spoon onto a warm dish and serve immediately.
Useful tip:
Aspargus grown in Asia tends to have slender stalks – though regular stemmed varieties will work too.
