Spinach, Blue Cheese and Pancetta Salad with Almonds
A delicious light salad with an Oriental touch, perfect for a light lunch
Preparation:
- In a frying pan over a medium to high heat, fry the pancetta until crispy. Leave to cool slightly.
- In a clean, dry plan, briefly toast the almonds until golden brown. Roughly chop.
- In a salad bowl, add the pancetta, almonds and gorgonzola to the spinach.
- For the dressing, mix the remaining ingredients together and dress the leaves.
- Divide between two bowls to serve.
Useful tip:
Omit the pancetta for a vegetarian alternative.
