Spinach, Almond, Gorgonzola and Crispy Lardon Salad

A delicious light salad with an Oriental touch that is perfect for a light lunch.

Preparation:

  1. Fry the lardons over a medium to high heat until crispy. Leave to cool slightly.
  2. In a clean, dry plan, briefly toast the almonds until golden brown. Roughly chop.
  3. In a salad bowl, add the lardons and almonds to the spinach.
  4. For the dressing, mix the remaining ingredients together and dress the leaves.
  5. Divide between two bowls to serve.

Useful tip:

Omit the pancetta for a vegetarian alternative.
