Vegetable Thai Chilli coconut Stir fry Prep time: 8 minutes 
Cooking time: 6 Minutes

Ingredients

  • 1 tbsp vegetable oil
  • 1 red pepper, sliced
  • 75g green beans- cut in half
  • 75g mushrooms- sliced
  • 1 courgette- cut into strips
  • 4 shallots- cut into quarters
  • 1 Blue Dragon Chilli Coconut Shot

Spicy Coconut Stir Fry

A delicious creamy yet spicy stir fry, perfect for those meat-free Monday!

Preparation:

  1. Heat the oil in a wok and add the vegetables, stir fry for 2-3 minutes
  2. Pour over the Chilli Coconut Sauce and simmer for 1 minute
  3. Serve with rice or noodles

Useful tip:

To get a great crunch to your vegetables such as peppers and mange tout when you are stir frying, add 3-4 tablespoons of water to your wok while cooking... more
