Soba Noodle Soup with Scallops

Scallops give this noodle dish a touch of luxury.

Preparation:

  1. Cook the Soba noodles according to pack instructions. Drain and rinse under cold water. Set aside.
  2. Combine the mirin, soy sauce, rice vinegar and stock granules with 750ml water in a saucepan and bring to the boil. Reduce the heat, then add the spring onions, mushrooms and ginger and gently let it simmer.
  3. Heat a griddle pan or frying pan and sear the scallops in batches for about 1-2 minutes. Keep warm.
  4. Divide the noodles among four serving bowls and pour over the hot stock.
  5. Top each portion with 6 scallops and serve.
