Soba Noodle Soup with Scallops
Scallops give this noodle dish a touch of luxury.
Preparation:
- Cook the Soba noodles according to pack instructions. Drain and rinse under cold water. Set aside.
- Combine the mirin, soy sauce, rice vinegar and stock granules with 750ml water in a saucepan and bring to the boil. Reduce the heat, then add the spring onions, mushrooms and ginger and gently let it simmer.
- Heat a griddle pan or frying pan and sear the scallops in batches for about 1-2 minutes. Keep warm.
- Divide the noodles among four serving bowls and pour over the hot stock.
- Top each portion with 6 scallops and serve.
