vegetable oil
- 220ml
boiling water

Scalded Dough
Essential for making Char Siu Buns.
Preparation:
- Place the flour and salt in a mixing bowl and stir to combine.
- Add the oil and the boiling water and using a spoon, mix to rough dough.
- Turn onto a floured surface and knead for at least 5 minutes until it becomes smooth.
- If the dough is too sticky knead in more flour.
- Cover the dough with a damp cloth and leave for 20 mins.
