pork mince, or forcemeat

onion, finely chopped
- 1
garlic clove, crushed
- 100g
Stilton
- 1/2 small
egg, beaten

salt and pepper for seasoning
- 4 tbsp
chutney (spiced apple or fruit chutney is nice)
- 2 tbsp

- 4
rolls (the crustier the better)
- Some
little gem lettuce for garnish
- 2 tbsp
vegetable oil, for frying

Sausage and Stilton Burgers
These burgers are the ultimate way to use up Christmas leftovers...
Preparation:
- In a mixing bowl mix together the onion, garlic, pork, stilton and egg until well combined. Form into 4 balls and then shape into burger patties. Set aside.
- In a frying pan or griddle add the oil and heat. When hot ad the burgers and cook on both sides until the meat is cooked and the stilton starts to deliciously ooze from the burger.
- In a another bowl mix the chutney and sweet chilli until combined.
- Assemble the buns by slicing in half and toasting under a grill if desired. Place a burger in each bun, garnish with lettuce, spiced chutney and extra cheese if you are feeling indulgent. Serve.
Useful tip:
Sage is a natural partner for pork, so if you have any leftover from your stuffing, why not finely chop it and this to your burger mixture too?
