Salmon with Wilted Green Stir-Fry
This simple, fast and healthy dish is an ideal after work supper.
Preparation:
- Heat a little of the oil in a wok or frying pan over high heat. Cook the fish in batches for 30 seconds on each side, or until lightly coloured. Use a fish slice to gently remove the fish from the pan and set aside on a warm place.
- Add the remaining oil and stir-fry the mushrooms and garlic for 1-2 minutes, add the bok choy or Chinese cabbage and cook for a further 1 minute.
- Add the Oyster and Spring Onion Sauce, stir over a high heat until piping hot. Add the spinach and beansprouts tossing until they just begin to wilt.
- Gently stir in the salmon pieces (the fish will break up if over-stirred).
- Add the soy sauce and fish sauce (optional) and spoon onto a warm plate or bowl of steamed rice or thin egg noodles.
- Sprinkle liberally with toasted sesame seeds.
