Salmon with Wilted Green Stir-Fry

This simple, fast and healthy dish is an ideal after work supper.

Preparation:

  1. Heat a little of the oil in a wok or frying pan over high heat. Cook the fish in batches for 30 seconds on each side, or until lightly coloured. Use a fish slice to gently remove the fish from the pan and set aside on a warm place.
  2. Add the remaining oil and stir-fry the mushrooms and garlic for 1-2 minutes, add the bok choy or Chinese cabbage and cook for a further 1 minute.
  3. Add the Oyster and Spring Onion Sauce, stir over a high heat until piping hot. Add the spinach and beansprouts tossing until they just begin to wilt.
  4. Gently stir in the salmon pieces (the fish will break up if over-stirred).
  5. Add the soy sauce and fish sauce (optional) and spoon onto a warm plate or bowl of steamed rice or thin egg noodles.
  6. Sprinkle liberally with toasted sesame seeds.
