Salmon Cucumber Rolls

A deliciously fresh sushi roll.

Preparation:

  1. Prepare the sushi rice according to pack instructions and season with the Sushi Su or rice vinegar and sugar. Spread the rice on a shallow plate and leave to stand until it has cooled down.
  2. Place the bamboo mat on the work surface and place a sheet of sushi nori on top, with the shiny side down.
  3. Spoon half the rice into the centre of the sushi nori and spread to cover the whole sheet, leaving a 1.5cm margin on the side that is furthest away from you.
  4. Place half the filling ingredients in a line across the middle.
  5. Pick up the bamboo mat and roll it over away from you so that all the rice is now tightly enclosed inside the sushi nori.
  6. Give the roll a gentle squeeze before removing the mat.
  7. Seal the uncovered edge of the sushi nori with a little water.
  8. Cut the sushi roll with a wet knife into 6-8 pieces.
  9. Repeat steps 2-8 to make the second roll.
  10. Serve with Wasabi Paste (watch out - it's hot!), Japanese Soy Sauce and Sushi Ginger.

Useful tip:

Combine the Japanese Soy Sauce with some Wasabi Paste to create a spicy dip for your sushi rolls.
Use the sushi ginger as a pallet cleanser between eating different pieces of sushi.
