Pork Chow Mein
A twist on the classic chow mein dish, of stir-fried noodles
Preparation:
- Place the noodles into a large pan of boiling water, return to the boil, remove from the heat and leave to stand for 3 minutes. Drain and rinse well under cold water.
- Meanwhile, heat the wok or frying pan over a high heat, and add the groundnut oil. When very hot add the pork and stir fry for 5 minutes, then add the mange tout and pepper and stir-fry for a further 2 minutes.
- Add the Blue Dragon Chow Mein Stir Fry Sauce to the pan with the drained noodles, heat through stirring for 1 minute.
- Spoon into warm bowls and garnish with spring onion curls.
Useful tip:
100g dry noodles give about 250g ready for wok noodles... more
Add 1/2 tsp each of honey and soy sauce with the stir-fry sauce to add extra depth to the flavour.
For a vegetarian Chow Mein replace the pork with 150g of mixed mushrooms such as shitake, button and straw mushrooms.
For a spicier dish add 1tsp chill sauce.
For a more traditional Chow Mein, replace the mange-tout with 1/2 400g tin of Blue Dragon Mixed Vegetables.
