An old favourite, that makes even the coldest days seem sunny!

Cut the top off the pineapple and carefully scoop out the inside, making sure you don't puncture the skin.
Purée the pineapple flesh and tip into a sieve so the juice drains through. Press it gently to extract all the juice.
Pour 120ml of the pineapple juice into a cocktail shaker. Add the coconut milk, ice and rum. Shake vigorously until well chilled.
Strain into the pineapple and drink through a straw.
