Perfect Pina Colada
An old favourite, that makes even the coldest days seem sunny!
Preparation:
- Cut the top off the pineapple and carefully scoop out the inside, making sure you don't puncture the skin.
- Purée the pineapple flesh and tip into a sieve so the juice drains through. Press it gently to extract all the juice.
- Pour 120ml of the pineapple juice into a cocktail shaker. Add the coconut milk, ice and rum. Shake vigorously until well chilled.
- Strain into the pineapple and drink through a straw.
