Peas and Carrots Chicken Stir fry

The traditionally pairing of peas and carrots are brought bang up to date in this chicken sweet and sour dish!

Preparation:

  1. Prepare the noodles as per the pack instructions. Drain and set aside.
  2. Take a large frying pan or wok and heat half the oil until just before smoking point. Add the chicken breast strips and fry until golden brown (approximately 4-6 minutes). Remove and set aside on some absorbant paper.
  3. Clean the pan and add the remaining oil to the pan. Add the carrots and stir fry for 1-2 minutes. Add 20ml water to the pan and the peas and cook for 5 minutes.
  4. Add the Blue Dragon stir fry sauce, cooked chicken and noodles, and toss to coat. Serve immediately garnished with fresh coriander.

Now recipe tasted slightly bland, would love to have put peppers and maybe a couple of chilli flakes in. But we all enjoyed it as was.

Made this yesterday as I had run out of peppers and onions which I would have usually used and it was lovely,my son even asked if we had any left(we didn't but I promised to make it again soon).Then I came on the website today (to look at the binder offer) and saw this recipe! its fab,cheap,quick and extremely tasty...go on try it!
