Ingredients

  • seafood (mixed)Such as prawns, squid, fish.
  • vegetables (mixed)Such as mushrooms, peppers, baby sweetcorn, asparagus, green beans and sweet potato
  • 1 pack Blue Dragon Tempura Batter Mix
  • 225ml water, ice cold
  • vegetable oil, for deep frying

Mixed Tempura

A light and crispy batter, ideal as a snack or canape.

Preparation:

1. Wash the seafood and vegetables; cut peppers, squid, fish, and sweet potato into strips, leave the rest of the ingredients whole.

2. Combine the batter mix with the water and stir well to remove most of the lumps. Ideally use the batter immediately and do not leave to stand.

3. Heat the oil in a wok or deep fat fryer to 160ºC/325ºF.

4. Dip vegetables and seafood into batter and deep fry in batches for 2-3 minutes or until golden brown.

5. Dry on a rack and serve immediately.

6. Tastes great dipped into Blue Dragon Soy Sauce or Sweet Chilli Dipping Sauce.

For an even lighter texture, use sparkling water to make the batter.
