Delicate fish combined with the rich flavour of miso - a classic Japanese combination!

Preparation:

  1. Wash the fish steaks and coat evenly with the miso paste. Leave to marinate for at least 2 hours.
  2. Gently remove the miso paste from the fish steaks, using a spatula.
  3. Combine mirin, sake, pepper, cornflour and 1 tbsp vegetable oil and coat the fish steaks with the mixture.
  4. Heat enough oil in a wok for shallow frying.
  5. Fry the fish steaks on both sides until cooked through and nicely browned.

Having tried this I found it very good and also works well with salmon fillet or as I did a mix of fish to give colour to the dish white and red with some tiger prawns..
