Miso dressed mixed bean salad

Cooking time: 10 minutes

Ingredients

  • 250g mixed beans (French, runner, winged, mange tout peas) sliced into 5cm lengths or left whole
  • 50g sesame seeds
  • 1 tsp sugar
  • 2 tbsp Blue Dragon Miso Soup paste, or Miso Paste (red or brown)
  • 2 tbsp Blue Dragon Mirin

Serves: 4-6 as a side salad

Miso dressed mixed bean salad

A great side salad.

Preparation:

  1. Cook the beans in a pan of salted water for 2 minutes, or until just tender. Refresh under icy water to maintain their bright green colour.
  2. To make the dressing, toast the sesame seeds in a dry frying pan until the seeds are a light golden colour and smell aromatic. Put all the seeds bar 1 tablespoon full (for the garnish) in a pestle and mortar and pound until a powder is formed. Gradually mix the sugar, miso and mirin to form a thickish paste.
  3. Toss the beans in a bowl with the paste and garnish with the reserved sesame seeds.

This was delicious! The toasted sesame seeds mixed with the Miso gives the beans a lovely nutty taste. I used the Miso out of Blue dragon's Miso soup as i only needed a little bit and the soup had a few different packets inside so i only used what was needed. Definately making this again!
