Membrillo & Gorgonzola Stuffed Peppers

Decicious barbequed stuffed peppers, ideal as a side dish or superb for vegetarians

Preparation:

  1. Take two long sweet capsicum peppers and slice in half (top to tip). Remove the seeds, but ideally keep the stem intact for presentation purposes. Rub the skins with oil.
  2. Take the membrillo (quince cheese) and cut into small cubes about the size of a pea. Divide the small cubes, evenly between the halved peppers.
  3. Then drizzle a teaspoon of Blue Dragon Sweet Chilli Dipping Sauce Hot over the membrillo pieces in each half pepper.
  4. Then take the cheese and spread over the sweet chilli and membrillo pieces into the cavity. Season with pepper.
  5. Grill on the barbeque for 10-15 mins or until the base is charred and the cheese melted. Serve with a green salad.
