Mange Tout, Pak Choi and Cashew Nut Stir Fry

A lovely, fresh stir fry that's packed full of texture and flavour- perfect for meat free Mondays!

Preparation:

  1. In a dry wok or frying pan, heat the cashew nuts over a medium heat until they turn golden brown and smell nutty. Set aside.
  2. Add the oil to the wok and heat until simmering and just before smoking point. Add the mange tout and pak choi stems. Stir fry for 2-3 minutes until cooked but still al dente.
  3. Next add the pak choi leaves, toasted cashews, Oyster Sauce, Light Soy Sauce and water and stir fry for a futher minute, tossing the vegetables to coat. Finally turn off the heat and drizzle the Sesame Oil over just before serving.

Useful tip:

To get a great crunch to your vegetables such as peppers and mange tout when you are stir frying, add 3-4 tablespoons of water to your wok while cooking... more

Very good recipe for our "Meat Free Mondays"...Cashew nuts and pakchoi provided texture and the oyster sauce made it a lovely consistancy...Delicious
