Japanese Salad with Prawns

A deliciously fresh salad with a spicy twist of wasabi.

Preparation:

  1. Peel the avocados, take out the stone and cut the flesh into cubes.
  2. Peel the cucumber and cut it into chunks. Peel the carrot and cut it into matchsticks.
  3. Cut the cooked prawns in half to make approximately 2cm long pieces.
  4. Mix the soy sauce, rice vinegar and wasabi paste and combine the sauce with the rest of the ingredients in a salad bowl.
  5. Serve immediately.

Prawns can be cooked with the shell intatct - especially successful when cooked over a barbeque... more
