Indulgent Baked Bananas
It is said that chilli enhances the taste of chocolate - this is ideal as a quick pud for the BBQ. Alternatively, cook for the same time in a conventional oven at 200°c.
Preparation:
- Take four ripe bananas. Score lengthways (tip to tip) with a knife and with your fingers, create a cavity by pushing the flesh to either side.
- Take squares of the broken dark chocolate, and insert into the cavity.
- Take a little chopped red chilli and add to the filling.
- Then, wrap the banana in foil so that only the open edge is peeking through. Carefully spoon a couple of teaspoons of coconut cream into the cavity. Then wrap the foil and secure by twisting the ends.
- Once you have finished cooking your barbequed meats, place the bananas on the grill and leave for 15-20 mins, or until soft and gooey.
- Serve in their wrappers for instant satisfaction, or serve with vanilla ice cream in their skins. CAUTION- The melted chocolate and foil will be hot. Wait to cool before serving.
