Honey, Lemon and Ginger Well-being Stir fry

Honey, Lemon and Ginger wellbeing stir fry Prep time: 10 mins 
Cooking time: 10 mins

Ingredients

  • 2 tbsp sesame seeds
  • 1 tbsp sunflower oil
  • 4 finely sliced chicken breasts
  • 6 Cm piece ginger, peeled and finely chopped
  • 1 yellow or orange pepper, deseeded and sliced
  • 1 leek, sliced on the angle into 0.5 Cm rings
  • 100g Baby corn cobs
  • 100g mange tout, cut in half diagonally
  • 4 portions (soaked according to pack) Blue Dragon Wholewheat Noodle Nests
  • 1 lemon, juiced
  • 1 tbsp runny honey
  • 6 tbsp Blue Dragon Dark Soy Sauce
  • 1 tbsp Blue Dragon Sesame Oil

Honey, Lemon and Ginger Well-being Stir fry

This stir fry has the soothing functional benefits of honey,lemon and ginger, whilst tasting zingy and fresh.

Preparation:

  1. Lightly toast the sesame seeds in a dry wok, on a medium heat then set aside.
  2. Heat the sunflower oil in the wok and add the chicken. Cook until tender.
  3. Add the ginger, pepper, leeks and baby sweetcorn pieces.
  4. Add a couple of tablespoons of water and stir fry for 3-5 minutes until the vegetables are tender but retain bite.
  5. Next add the mange tout, the pre-soaked noodles and toss in the chicken and vegetables.
  6. Add the lemon juice, honey, soy sauce and sesame oil. Toss again until coated. Serve, sprinkled with the toasted sesame seeds.

What a healthy, fast and aromatic dish! The sesame seeds when toasted give out a wonderful fragrance. Don't over cook the chicken, cook them till tender and then put them aside, cook the vegetables and then add the chicken in the end, it make sure the chicken tastes soft, moist and tender. Ginger, pepper, leeks gives this dish a zin explosion on your taste buds, and they are also good for your health. You can cut the baby sweetcorns in the middle to make them cook faster. the little bit added water create a steam effect to seal the freshness inside the vegetables, make them taste soften inside and crunchy outside. lemon juice, honey, soy sauce and sesame oil create a wonderful, BBQ flavour glaze that not just makes the dish tastey but also looks glossy and smooth. Overall, it's got beautiful mellow colour, spicy and sweet taste and wonderful aroma!

I love this recipe. The combination of flavours are really tasty. I would definately recommend to family and friends!
