Green Tea Muffins with White Chocolate
A delicious treat that can served as a dessert or with afternoon tea.
Preparation:
- Preheat the oven to 180ºC (350ºF / Gas 4) and grease a 6-hole muffin tin (or line with paper muffin cases).
- Melt the butter and chocolate together over a water bath, stir until smooth and remove from the heat.
- Dissolve the matcha in 50ml hot water. Add 115g caster sugar.
- Combine the tea-sugar mixture with the melted chocolate and butter and beat with an electric whisk for 1-2 minutes.
- Add the egg, flour and baking powder and beat for another 2-3 minutes or until smooth.
- Spoon the mixture into the muffin tin and bake in the oven for 15-20 minutes (check after 15 minutes of the muffins are done).
- Let the muffins cool down before removing them from the tin.
- Dust with icing sugar and serve.
Useful tip:
You can easily check whether the muffins are done by inserting a wooden cocktail stick. If the stick comes out clean, you can take the muffins out of the oven.
