Green Tea Muffins with White Chocolate

Ingredients

  • 50g butter, unsalted, cut into small pieces
  • 50g white chocolate, chopped
  • 1 bsp Matcha (Japanese green tea powder)
  • 115g caster sugar
  • 1 egg, lightly beaten
  • 125g plain flour, sifted
  • 1/2 tsp baking powder
  • 2 tbsp icing sugar

Green Tea Muffins with White Chocolate

A delicious treat that can served as a dessert or with afternoon tea.

Preparation:

  1. Preheat the oven to 180ºC (350ºF / Gas 4) and grease a 6-hole muffin tin (or line with paper muffin cases).
  2. Melt the butter and chocolate together over a water bath, stir until smooth and remove from the heat.
  3. Dissolve the matcha in 50ml hot water. Add 115g caster sugar.
  4. Combine the tea-sugar mixture with the melted chocolate and butter and beat with an electric whisk for 1-2 minutes.
  5. Add the egg, flour and baking powder and beat for another 2-3 minutes or until smooth.
  6. Spoon the mixture into the muffin tin and bake in the oven for 15-20 minutes (check after 15 minutes of the muffins are done).
  7. Let the muffins cool down before removing them from the tin.
  8. Dust with icing sugar and serve.

Useful tip:

You can easily check whether the muffins are done by inserting a wooden cocktail stick. If the stick comes out clean, you can take the muffins out of the oven.
