  • 125g self-raising flour
  • 2 tbsp milk
  • 1 tbsp butter, melted
  • 1 tbsp caster sugar
  • 3 bananas
  • vegetable oil, for deep frying
  • icing sugar
  • ice cream (optional)

Fried Fragrant Bananas

These battered bananas are delicious and slightly sinful, but go on – you deserve it!

Preparation:

  1. Make the batter: combine the flour, milk, butter and sugar with enough water to beat and make a thick batter.
  2. Cut the bananas into 3cm lengths
  3. Fill the wok ¼ full with oil and heat to a medium high temperature 180’C/ 350’F or until a piece of bread browns in 15 seconds when dropped in the oil. Dip the bananas into the oil and carefully fry them for 3 mins or until golden brown on all sides. Drain on paper towels, dust with icing sugar and for those with an extra sweet tooth serve with vanilla ice-cream.
