Easy Sweet and Sour Chicken

Vegetable Sweet and Sour Prep time: 10 mins 
Cooking time: 10 mins

Ingredients

  • 4 tbsp vegetable oil
  • 4 finely sliced chicken breasts
  • 2 red peppers (large), cored, de-seeded and cut into small chunks
  • 2 yellow peppers, cored, de-seeded and cut into small chunks
  • 200g pumpkin, peeled and cut into 2cm cubes
  • 2 large red onions, thickly sliced
  • 100g Baby corn cobs
  • 100g sugar snap peas
  • 100g fresh pineapple, diced
  • 2 sachets Blue Dragon Sweet & Sour Stir-Fry Sauce

Easy Sweet and Sour Chicken

This super easy sweet and sour dish works brilliantly with chicken, but omit the protein for a vegetarian option.

Preparation:

  1. Heat the oil in the wok and add the chicken. Cook until tender. Remove and set aside.
  2. Add a touch more oil to the wok and add the peppers, pumpkin and onion. Stir fry for 1 minute.
  3. Then add the sweetcorn, sugar snap peas and pineapple chunks. Add 2-3 tbsp water to the pan and stir fry for a further 3-4 minutes.
  4. Finally add the Blue Dragon Sweet and Sour Stir fry Sauce and return the chicken to the pan, toss until cooked through and coated. Serve immediately with rice.

Useful tip:

The secret to the perfect stir fry is to make sure the oil is piping hot before you put the ingredients in the pan or wok... more

A bit on the sweet side so left out the pumpkin, sweet corn and sugarsnap peas and added green pepper, garden peas and broccoli. Lovely.
