Easy Chicken Chow Mein

This was a dish traditionally made to use up leftovers- why not use yours.. It tastes delicious and will suit all palates- add a chilli if you want to add an extra kick!

Preparation:

  1. Cook the Blue Dragon noodles according the pack instructions, until 'al dente' (i.e. they still have 'bite'). Drain and set aside.
  2. Heat the oil in the wok; add the ginger and then the garlic. Stir fry to allow the aroma to be released.
  3. Add the peppers, mushrooms, spring onion and chicken and stir fry for 2 minutes.
  4. Stir in the bean sprouts followed by the noodles.
  5. Add the Blue Dragon Chow Mein Stir fry Sauce and stir fry until heated through. Add Blue Dragon Soy Sauce to taste. Serve immediately.

Chicken Chow Mein, an all time classic. It goes well with all dieshes and just wonderful on its own for a quick snack! Egg noodles have this glossy texture that they just slide into your mouth. Ginger and galic when crushed, gives out a wonderful earthy spicy aroma and flavour that melt into the dish and gives it a wonderful overall zing taste, together with chilli, they are the most common used seasonings in classic Chinese cooking! Shiitake mushrooms have an aromatic meaty texture that goes well with chicken. Bean sprouts give it a little added crunch. Overall, it's quick, it's tasty and it looks wonderful!

I was looking for a tasty, EASY recipe to cook with chicken and this is it. So very quick to make. Also very healthy for the kids.
