Crispy Pork with Sweet Plum & Ginger Sauce
A Japanese take on sweet & sour.
Preparation:
- Wash and cut the pork into bite-size pieces.
- Combine Chinese cooking wine or sake, salt, pepper, sugar and 1 1/2 tsp cornflour and use to marinade the pork for at least 2 hours.
- Mix egg white and remaining cornflour and combine with the marinated pork to form a thin batter coating.
- Heat enough oil in a wok for deep-frying.
- Deep-fry the pork pieces until golden brown.
- Use a slotted spoon to remove the pork and drain off any excess oil.
- Heat 2 tbsp vegetable oil, add the Sweet Plum and Ginger Yaki Sauce and stir until runny.
- Add the fried pork pieces and mix well to coat.
- Serve immediately, garnished with spring onions and toasted sesame seeds.
