Ingredients

  • 200g red peanuts, with their skins on
  • vegetable oil, for deep frying
  • 1/2 tsp salt
  • 1/2 tsp Chinese five spice powder (or 1/2 tsp ground roasted Sichuan pepper)
  • pinch dried chilli flakes

Crispy Deep-Fried Peanuts

These are the perfect nibbles when you're entertaining guests, they're superbly moreish!

Preparation:

  1. Heat the oil gently until about 130’C. Add the peanuts and deep-fry until fragrant and aromatic, being very careful not to over cook or cook too quickly – this results in a bitter taste.
  2. Remove them with a slotted spoon and drain on kitchen towel.
  3. When ready to serve, toss in ½ tsp salt and ½ tsp five spice, and the chilli flakes.
