  • 4 egg
  • 75g light brown sugar
  • 250ml Blue Dragon Coconut Milk
  • 1 tsp vanilla / jasmine/ rose extract
  • - fresh mint leaves, to garnish
  • - icing sugar, to garnish

Coconut Custard

This traditional dessert can be baked or steamed and goes particularly well with sweet sticky rice.

Preparation:

  1. Preheat the oven to 150’C/300’F/ Gas 2. Whisk the eggs and sugar in a bowl until smooth. Add the coconut milk and extract and whisk well.
  2. Strain the mixture into a jug, and then divide between four individual ramekin dishes.
  3. Stand the ramekins in a roasting pan and fill it up with boiling water until halfway up the side of the dishes. Cover with foil loosely.
  4. Bake for about 35-40 minutes until the custards are set. When cooked (should wobble slightly when the dish is moved), remove from the water and leave to cool.
  5. Decorate with icing sugar and mint.
