Blue Dragon Chilli Sesame Yaki Sauce
- 1 tbsp
ginger juice (squeezed out of fresh ginger)
- 2 tbsp
Chinese cooking wine or sake
- 4
chicken drumsticks (use free-range if possible)
- 3 tbsp
vegetable oil
- 2 cloves
garlic, peeled and finely chopped
- 2 cm
ginger, peeled and finely chopped
- 600ml
water
- 2 tsp
caster sugar

Chilli Sesame Chicken
Juicy chicken drumsticks in a delicately spiced chilli sesame sauce.
Preparation:
- Combine 4 tbsp Blue Dragon Chilli Sesame Yaki Sauce with ginger juice and Chinese cooking wine to create a marinade.
- Thoroughly coat the chicken with the marinade and leave in the fridge for at least half an hour. Remove and reserve the marinade.
- Heat a stew pot and add 3 tbsp of oil. Fry garlic and ginger for a few minutes, until aromatic.
- Add the chicken pieces and cook on both sides to seal the meat.
- Add the rest of the Blue Dragon Chilli Sesame Yaki Sauce and the remaining marinade, keep stirring for 1-2 minutes.
- Add the water and sugar; bring to the boil.
- Reduce the heat to low and simmer the chicken in the sauce for 20-30 minutes until cooked through and tender.
