Chilli Sesame Chicken

Chilli sesame chicken Prep time: 15 mins plus time for marinating (at least 30 mins) 
Cooking time: 30 mins

Ingredients

  • 8 tbsp Blue Dragon Chilli Sesame Yaki Sauce
  • 1 tbsp ginger juice (squeezed out of fresh ginger)
  • 2 tbsp Chinese cooking wine or sake
  • 4 chicken drumsticks (use free-range if possible)
  • 3 tbsp vegetable oil
  • 2 cloves garlic, peeled and finely chopped
  • 2 cm ginger, peeled and finely chopped
  • 600ml water
  • 2 tsp caster sugar

Chilli Sesame Chicken

Juicy chicken drumsticks in a delicately spiced chilli sesame sauce.

Preparation:

  1. Combine 4 tbsp Blue Dragon Chilli Sesame Yaki Sauce with ginger juice and Chinese cooking wine to create a marinade.
  2. Thoroughly coat the chicken with the marinade and leave in the fridge for at least half an hour. Remove and reserve the marinade.
  3. Heat a stew pot and add 3 tbsp of oil. Fry garlic and ginger for a few minutes, until aromatic.
  4. Add the chicken pieces and cook on both sides to seal the meat.
  5. Add the rest of the Blue Dragon Chilli Sesame Yaki Sauce and the remaining marinade, keep stirring for 1-2 minutes.
  6. Add the water and sugar; bring to the boil.
  7. Reduce the heat to low and simmer the chicken in the sauce for 20-30 minutes until cooked through and tender.
