Chilli and Lime dressed seared Salmon

A fresh and healthy way to enjoy salmon fillets. This makes an ideal light, quick and easy dinner option.

Preparation:

  1. Arrange the salmon fillets in non-metallic dish and set aside. Whisk together the lime juice, brown sugar and White Rice Vinegar, until combined, then brush over the fillets. Cover and leave in the fridge to marinate for 15 minutes.
  2. Meanwhile, make the dressing by whisking together the remaining ingredients.
  3. Heat a large griddle pan or frying pan to hot and cook the salmon fillets according to the packet instructions. Arrange on plates with a green salad, then drizzle over the dressing and serve immediately.

I didn't have any allspice, but it was fine without it and I added a chunk of finely chopped ginger. Sitting on top a bed of boiled noodles, a dinner to brighten up the gloomiest of bad days :)
