Chicken & Pepper Stir Fry

Thai coconut chicken chilli stir fry Prep time: 5 minutes 
Cooking time: 6 minutes

Ingredients

  • 1 tbsp vegetable oil
  • 2 chicken breast (free-range if possible), cut into very thin strips
  • 1 red pepper, sliced
  • 75g green beans- cut in half
  • 1 Blue Dragon Chilli Coconut Shot

Chicken & Pepper Stir Fry

A creamy, yet spicy Stir Fry

Preparation:

  1. Heat the oil in a wok and add the chicken strips, stir fry for 2 minutes
  2. Add the pepper & green beans and stir fry for a further minute
  3. Pour over the Chilli Coconut Sauce and simmer for 1 minute
  4. Serve with rice or noodles

This was very easy to make and the sauce had plenty of heat. Once the chicken and vegetables were prepared, it only took minutes to cook. I have tried it twice now, once with rice and once with noodles. I prefer it with noodles. A great after-work meal.
