Ingredients

onion, finely sliced

red chillies, finely sliced
- 1/2 tsp
black pepper, freshly ground

chicken breast (free-range if possible), cut into strips
- 600g
butternut squash ,peeled and thinly sliced
- 3 tbsp
Blue Dragon Fish Sauce
- Handful
basil leaves

Chicken and Butternut Squash stir fry
A really inexpensive and filling stir fry.
Preparation:
- Heat the oil in a pre-heated frying pan or wok over a medium to high heat. Add the onions, chillies and pepper and cook for 1 minute.
- Add the chicken and cook for 3 minutes or until browned.
- Add the butternut squash and Blue Dragon Fish Sauce, cover and cook for 3-4 minutes, stirring occasionally, until the squash is just soft. Stir through the basil and serve with steamed jasmine rice.
Useful tip:
Long-grain and basmati rice are great for grains that don't stick together... more
