Ingredients

  • A large bundle of asparagus (around 24 spears)
  • 6 tbsp olive oil
  • salt and pepper
  • 1 round of goat's cheese
  • A handful walnuts
  • 4 tbsp Blue Dragon Sesame Oil
  • If desired, balsamic vinegar

Charred Asparagus Salad

A light salad that is great as a light lunch.

Preparation:

  1. Take the asparagus, break the stems at their natural breaking point and blanch in boiling water for two minutes. Then place on a wire rack or griddle, baste with olive oil and season with salt and pepper. Grill or griddle for 5-10 minutes turning regularly until the stems are charred and cooked through.
  2. Arrange on a plate, crumble over the goat's cheese and walnuts and drizzle with Sesame Oil (and balsamic vinegar if desired). Serve warm.
