Barbequed Pork Fillet Baps
This very simple marinade for pork fillet adds a really nice spicy note. Whole pork fillet works really well on the barbeque as it stays moist during and after cooking, unlike pork kebabs that use smaller cubes of meat.
Preparation:
- Take a piece of pork fillet and remove the white sinews from the meat. Set aside.
- In a pestle and mortar place two cloves of garlic and a pinch of coarse salt, and pound to a paste. Then add 2 red bird's eye chillies and again pound until smooth. When this has been acheived add a good squeeze of lime juice, the brown sugar and Fish Sauce. Mix until combined.
- Place the pork in a non-metallic bowl with the marinade and baste. Marinate for up to 3 hours.
- Grill the pork on the BBQ for 15-20 mins or until it is cooked all the way through. Leave to rest for 10 minutes.
- When rested, slice in 0.5cm slices against the grain and serve in chunky baps with mayonnaise, salad and mildly spiced red onion salsa.
