Ingredients

  • 1 large avocado cut in half
  • 1 small can of tuna in brine, well drained
  • 1 tbsp finely chopped celery
  • 1 tbsp lemon juice
  • 2 tbsp mayonnaise
  • tiny pinch of salt
  • sprinkle of black pepper
  • 1 tbsp finely chopped red onion

Serves: 2 (as a starter)

Avocado with Sweet Chilli Tuna

This recipe is ideal as a quick and healthy lunchtime bite – you can whip it up in minutes.

Preparation:

  1. Cut open the avocado and remove the stone to make 2 halves.
  2. Mix together the rest of ingredients, except the pepper, to create the tuna filling.
  3. Use a spoon to scoop the tuna filling into each half of the avocado. Sprinkle with black pepper and serve.
