Thai Red Pork Curry

A quick and easy pork curry that can be cooked in minutes

Preparation:

  1. Cut the pork fillet into thin slices. Heat the groundnut oil in a large wok and fry the Thai Red Curry Paste, Minced Ginger and Garlic for 30 seconds.
  2. Add the Coconut Milk to the wok, heat and then add the pork.
  3. Once the pork is cooked, add the juice of half a lime and sugar, to taste.
  4. Once this is piping hot serve scattered with thinly shredded red chilli.
